I am writing about lack of vegetarian food options at the SUB. Every day, many students venture through the University in search of food and nourishment. The place many like to come to eat, study and mingle is the SUB.
Although there are many restaurants with multiple options to choose from, I find it difficult to eat there sometimes because of the lack of vegetarian options. It is understandable that the majority of students who eat at the SUB are not vegetarians. But what about the rest of us?
I believe SUB needs to take the vegetarians of UNM into account when creating menu items at certain venues. It is obvious how popular vegetarian options are when 15 percent of the students choose a vegetarian option at their dining halls. A study done by Harbor-UCLA Medical Center found that vegetarian food items cost the same as meat items or even less.
SYSCO Corporation, the SUB's main food provider, also has a vegetarian line called MoonRose. MoonRose has 31 products to choose from. Why not try it out? How about offering more vegetarian soups or salads that aren't created with chicken or any other type of animal product?
I believe adding a vegetarian hamburger to the menu at Higher Grounds would benefit vegetarians by letting them have a choice between the veggie hamburger and the sautéed vegetable sandwich. I enjoy meeting friends at the SUB for lunch, but when the options run out, I am forced to find lunch elsewhere.

The SUB needs to offer more vegetarian options, even if it is one vegetarian hamburger at a time. Whether you are vegetarian or not, call the SUB administration office at 277-2331 and ask to speak to someone about more vegetarian options. Let these people know about the MoonRose line of food provided by SYSCO Corporation and request they purchase it.
