In response to your article, "Incoming food vendor makes changes at UNM," I would like to compliment the Dining Services department for taking the requests of their students so seriously.
It was wonderful to see that Chartwells District Manager Rudy Simchak recognizes the importance of expanding the vegetarian and vegan options on campus, since there is a growing demand for these products nationwide. In fact, a recent study by a leading food-service provider concluded that nearly a quarter of college students are actively looking for better vegan options when they sit down to eat.
This also mirrors the trend of students being more conscious of which industries they support and which they don't. For example, many students are horrified when they find out that chickens often have their beaks sliced off, or that many cows and pigs killed for food are routinely skinned and dismembered while still fully conscious. If these kinds of abuses were done to dogs or cats, it would result in felony cruelty to animals charges.
Thankfully, with products like vegetarian riblets and vegan pizza available in grocery stores, and tons of new options appearing on campus, students never have to travel far to find healthier, more humane cuisine.
