Editor,
I'm tired of the food at the SUB. It's bad for us students and bad for the local economy.
I say it's bad for students because it's not healthy food. It has too much fat; it has too much sugar; and it's loaded with chemicals.
Nobody can argue against the correlation between a healthy diet and students' performance in school. So why does UNM continue to allow bad-food corporations to monopolize the SUB food court?
The food available at the SUB is also bad for the local economy because the profits from Aramark - the corporation with a stranglehold on food services in UNM and many other universities - go to its corporate headquarters somewhere in Pennsylvania. In addition, it doesn't support local farmers.
I heard at the UNM Sustain meeting Tuesday that the contract with Aramark is up for renewal. In any case, the point is that UNM will soon be free to get its food elsewhere - hopefully healthier and more local food.

UNM should start bringing in more locally grown and healthier foods on campus. Perhaps UNM can contract the La Montanita Co-op to install a deli to replace one of the awful food providers we now have. Perhaps UNM can also contract Los Poblanos Organics and other small local farmers to bring in locally grown produce so that we students can have a real choice.
Perhaps UNM should not re-authorize its Aramark contract or sign any other fast-food dealer and should instead look to locally owned food service companies that care about the health of our community.
